This is basically what I sent to my insurance company so it's a bit detailed.
Update: this spec is now out of date as I'm rebuilding the car with a new engine, see the main pages for details.

1988 Escort RS Turbo 1597 CC CVH engine
Completely stripped, rebuilt & modified as follows: 
Cylinder head gas flowed but still standard valve sizes.
Head matched to inlet and exhaust ports.
Piper 285T camshaft 
K & N Freeflow air filter 
Turbo wastegate replaced with -31 version, set to 15 PSI
Engine management box chip changed to match wastegate.
Standard Escort Turbo Clutch 
Uprated Samco turbo hoses fitted 
Polished alloy rocker cover and inlet pipe. 
Estimated power output 150-160 Bhp 
Exhaust:
Custom made from Jetex 2.5" bore steel tubing, 
the remains of my previous Jetex RS Turbo exhaust & 2 Jetex silencers
Gearbox:
1988 Escort RS Turbo 5 speed with Limited slip differential
Driveshafts:
1988 Escort RS Turbo inner CV joints, 
1984 Fiesta XR2 shafts & outer CV joints 
Front & Rear Suspension:
Refurbished 1984 Fiesta XR2 Hubs
New XR2 steering rack
New front track control arms & tie rods
New rear axle, trailing arms & panard rod
All new bushes and ball joints.
All rubber suspension bushes replaced
 with Powerflex polyurethane bushes. 
New Monroe gasmatic shock absorbers all round 
New Front springs Quantum custom spec. 
New Rear springs Quantum custom spec.
Brakes:
New EBC MK5 Escort XR3i slotted & ventilated discs, Mintex pads. 
New Escort RS Turbo spec brake calipers 
New standard spec XR2 rear brake drums, shoes & cylinders 
New XR2 brake servo & rear bios limiting valve.
Copper/nickel brakes pipes.
Wheels:
Reconditioned Escort RS Turbo 15 x 7" 
Locking wheel nuts fitted. 
New Goodyear Eagle F1 195/45 R 15 Tyres
Interior:
1984 Fiesta XR2 dashboard, some parts replaced with new. 
Additional oil pressure/temp, water temp and boost gauges fitted in panel in 
old radio opening. 
Mk4 Escort switches fitted instead of XR2 
1988 Escort Cabrio half leather Recaro front seats. 
Rear seat and door panels will be trimmed to match fronts when finished. 
New Ford after market centre console, shorten by 1.5" to clear lower dash in Quantum
New MK3 Fiesta electric windows and central locking fitted.
ICE:
Pioneer tape/CD head unit (Model KEH-M9100) fitted in centre console. 
Pioneer 6 CD autochanger (Model CDX-M6) 
2 x New 180 watt/channel amplifiers fitted behind rear seat. 
4 x New Pioneer 180 Watt speakers
Alarm:
Alarm & Immobiliser details not mentioned incase it helps 
a thief. Lets just say it won't be easy to bypass. 
General:
All s/h parts used were fully reconditioned.
All bearings, bushes, seals etc have been replaced. 
All non high tensile nuts, bolts and washers have been replaced with stainless steel.
All new parts made are stainless steel or aluminum.
